Here is the definitive guide to making your own darn sandwich:
Step 1. Gather your supplies.
Today we’re just making your basic turkey sandwich that shouldn’t offend even the pickiest omnivore. We have here: bread, cheese, turkey, mustard, and mayo. Don’t forget the plate and knife!
Step 2. Preparing the bread.
Place two slices of bread on the plate. Spread condiments of choice on bread.
Step 3. Apply meat and cheese.
Open turkey package. Open cheese package. Apply both to one slice of bread in the form of a stack. Optional: veggies. I usually do, however, this guide is for picky eaters.
Step 4. Close it up.
Place unoccupied slice of bread on top of bread-turkey-cheese stack, condiment side down.
Step 5. Completing your task.
Your sandwich is now complete and you’re ready to taste the sweet, sweet flavor of low-sodium honey roasted turkey mixed with success. But, wait! There is one more thing left to do…

You guys, things have been really quiet here on FBB. Part of it has been having a packed schedule. Part of it has been the general state of the world getting me down. However, if I’m being honest, the biggest reason is that I am a terrible homemaker. Here are 5 reasons why:
I have a toddler living with me. Flora is a beautiful, intelligent, incredible tiny lady. Tidy she is not. I know, all of the other parents out there are shocked.
I now commute 45 minutes each way to and from work. I’m also a part time student. I have to budget my time. Sometimes that means not picking up the toys in the den or folding laundry. Sorry not sorry.
I have re-committed to my physical fitness. Y’all, I don’t think that I’m by any means in need of weight loss but it is really embarrassing when you can’t even bench press an empty bar. I try to hit the gym 3-5 days a week for at least an hour after work. (There’s an instagram about it too!) See above: budgeting time.
There is a man in my house. I’m not saying that all men are messy. I’m just saying that some of them are used to someone else doing the bulk of the cleaning and never having to put anything away themselves.
I had to cut myself some slack. Maybe homes where actual humans live aren’t meant to always be “company ready.” I have had to learn to be okay with that. I now aim for hygenic and comfortable.
I know I’ve been quiet lately but I really do plan on being back here more regularly. Maybe once a week instead of once a month. Aim high! Right? 😉
I’ve had a lot on my mind lately. I could be succumbing to meltdown mode right now but I’m not going to let it bother me. Somewhere along the way I dropped my meditation practice and sometime soon I plan on getting back into it. Right now I have other things to keep my zen. My to do list that I finally have time to check off, for instance.
Homemade pancakes to eat (with homemade blueberry syrup to boot). Coffee to drink. Beds to be made. Homework to do. A house to clean. A puppy to train. A fast approaching Miami trip to pack for. The last-minute shop. I’ve got this.
Already midway through the year! Wow! So much has happened recently. A quick recap to start:
I’ve officially started my journey transitioning from a job to a career. It is scary but I believe it will be well worth the personal development and reduced stress.

I spent the morning and afternoon with my younger brother in Charlotte today. We had a blast taking Flora to storytime at Barnes & Noble, re-living my past as a mallrat at Southpark, and then having an AMAZING lunch at New Zealand Cafe followed by delicious Snow Shakes from Kona Snow.
I’m excited to attend some July 4th festivities in town this year! Does anyone have big plans? Family traditions?
My mind and energy have been pulled in a million-and-one directions lately. I’m still committed to this little blog no matter how much (or little) I find the opportunity to write! I hope that you can be patient with me. I have a super long post for you!
Today I was off of work so I spent some serious time on meal prep for the week. As much as I would like to be able to make each meal from scratch every day (life goals), that just isn’t possible between work and school. It is much healthier for our bodies and the household budget to pull something semi-scratch made out of the freezer than stop by a drive-thru on busy nights. Let’s check out what I did!
Flora blessed me with a decent nap this morning/early afternoon, so I went ahead and prepped some chicken a few different ways. I had a huge pack of eight thighs from Aldi that I separated. Into the crockpot went four of the thighs with some leftover salsa for freezer burritos. The other four went into the oven in two separate casserole dishes, one with Pad Thai sauce and one with General Tso’s sauce.
While those were doing, I prepared A TON of rice, chopped some zucchini, and pulled some frozen carrots, cauliflower, and broccoli out to make veggie coconut stew. It’s the easiest thing ever. You saute your veggies of choice in a little butter (or coconut oil) and add a super generous shake of curry powder. Once those ingredients have had a few minutes to get acquainted, add one can of coconut milk and two cans of drained garbanzo beans. Simmer for about 10 minutes or so. If you want you can add a slurry of cornstarch and water to thicken it. (I didn’t this time because it seemed weird for freezing???) Serve over rice.
After the veggie stew was completed, I prepared some rice noodles and added them to my two dishes of shredded/deboned Pad Thai and General Tso chicken from the oven. Split them into freezer baggies and all they will need are a side of steamed veggies to make a meal.
By this point in the game, Flora was up and ready to eat lunch and play! I took a break to spend some quality time with my girl (and try to catch up on laundry lol right) until Will got home from work. Flora will be 18 months old in just a few days. Our baby definitely isn’t a little baby anymore. Oh, my heart!
As luck would have it (heh, heh), William made it home before our local Aldi closed. That means this Mama got to go grocery shopping all by herself! It would have been glorious had I not forgotten my list in my excitement. That part was tragic. I picked up tortillas to complete the freezer burritos, easy prep snacks, and some basic breakfast and lunch items.
After arriving home with my loot and putting everything away, I set out to finish my tasks. I started by cleaning out one of the produce drawers where good spinach goes to die and making it a quick grab snack station. Pro tip: all snacks need to be quick with a toddler. Or a mama. Or a daddy. Snacks should just be quick always.
When I was finished with that, I set up a little burrito prep station with tortillas, refried beans, shredded chicken, salsa, sour cream, rice, hot sauce, and taco cheese blend. I assembled our burritos, wrapped them in foil and then bagged them in freezer bags.
A few hours of work and two loads of dishes later, we now have about 20 servings of food ready to go for hectic evenings. I will report back in a couple of weeks as to how everything re-heated, what I would keep or change, and whether or not this saved us some dish duty as well as time and money!
